10 YEAR BLOGAVERSARY

It dawned on me this afternoon that yesterday was “Produce with Amy’s” 10 YEAR BLOGAVERSARY!

While I may not have realized fame and fortune in 10 years like some bloggers do, I feel rather accomplished. I set a goal to share my love of cooking, nutrition, growing flowers and vegetables, writing, photography – and the hopes that it would encourage myself, and others, to be more productive and healthy. I can proudly say that I have stuck with this goal! … More 10 YEAR BLOGAVERSARY

WHITE CHICKEN CHILI

Yes, I am sharing another soup recipe. For those that are not huge fans of soup, my husband heartily agrees with you. He does not hate soup, but he cannot eat it every-day-for-a-week like I can.  However, my step son Lukas and I think that is okay if John does not want soup – it … More WHITE CHICKEN CHILI

VELVETY ROASTED TOMATO & BASIL SOUP

When I add bowls to my meal plan, I tend to prepare the ingredients and keep them separate in the refrigerator. Then they can easily be assembled the night before (for a workday lunch) or custom-made via family members preferences.  … More CHICKPEA BOWLS WITH CUCUMBER TZATZIKI & LEMON TAHINI DRESSING

MEATBALLS WITH SPICY BULGOGI SAUCE, JASMINE RICE, & ROASTED CARROTS

The inspiration for this recipe comes from a meal kit that I purchased. Our family often gets into a food rut and meal kits are one way that I have found to help inspire new flavor combinations and choices. The meal kit provided a Bulgogi sauce packet for the meatballs and I enjoyed looking up the Korean origins of Bulgogi. I made my sauce using Gochujang (fermented hot chili paste). You can find it in most multicultural food sections. You could also use chili sauce or your favorite hot sauce. … More MEATBALLS WITH SPICY BULGOGI SAUCE, JASMINE RICE, & ROASTED CARROTS
