Salmon Patties – Switching Up Protein

They say breakfast is the most important meal of the day, but it can also be the most boring if you stick to the same old routine. Why not spice up your morning with some delicious salmon cakes? These crispy patties are packed with protein, omega-3 fatty acids, and flavor. They are easy to make and can be served with eggs, toast, salad, or whatever you fancy. Whether you prefer them hot or cold, salmon cakes are a great way to start your day with a variety of foods.

If you have been reading my blog, you know that the Waldos are a breakfast family. We do breakfast big on our homestead. Food is truly fuel and when you have projects to complete, you learn that you need food that sustains you for a long time.

While we raise our own pork and have a freezer full of bacon, sausage, and ham – sometimes we need to change up our protein. Therefore, salmon is a wonderful substitute. Not only is salmon high in protein, but in our retirement years we plan to live in Alaska. Therefore, salmon will be a major food source for us.

While we enjoy salmon patties for breakfast, they would also make a great lunch or dinner on a toasted bun or on a bed of lettuce. My husband enjoys the patty with a dollop of cream cheese (mixed with capers, lemon, and dill). 

SALMON PATTIES
(makes 5 generous patties)

*2 – 14 ounce cans of salmon
*2 eggs
*¼ cup of bread crumbs
*¼ cup of finely chopped onion
*¼ cup of finely chopped dill (you can substitute a couple teaspoons of dry dill – but fresh is always best)
*1 Tablespoon of minced garlic
*2 Tablespoons of capers
*Zest and juice of one lemon
*2 Tablespoons of worcestershire sauce
*1 teaspoon of salt and pepper

Mix all ingredients in a bowl and divide into 5 patties. My favorite method of cooking is a cast iron pan – cooked on low until brown. However, you can also prepare in an air fryer (350 degrees for 15 minutes).
