Healthy Lunch Ideas: Greek Chicken Salad Recipe

If there’s one thing I’ve learned as a perpetually busy human, it’s this – when life ramps up, the first thing I tend to sacrifice is myself. More specifically, my meals. I’ll spend hours supporting students, prepping lessons, answering emails, grading, and working weekends at the airport. Then I end up scrambling to find something nutritious for lunch. Too many times, I’ve ambled across the street at work to grab a bag of candy and a Red Bull when I feel tired mid-afternoon.

So I hit the restart button, and I’ve been trying to make one intentional change. Eat more fresh food. More vegetables. More color. More meals that actually make me feel awake instead of sluggish.

I know. It’s nothing glamorous. But minimizing dishes has eliminated one of my biggest mental barriers. I can prep several days’ worth of lunches in one shot, pop them in the fridge, and my busy self is grateful every time I open that door.

Lately, I’ve been obsessed with a salad that feels fresh, hearty, and so satisfying:

Greek Chicken Salads with Cucumber Tzatziki Sauce

Below is the exact recipe I’ve been using. It’s simple, bright, and perfect for assembling a few salads ahead of time.


🍗 Greek Chicken

Ingredients:

  • Chicken breast
  • ¼ cup finely chopped onion
  • 3 finely minced garlic cloves
  • 1 Tbsp dijon mustard
  • ¼ cup olive oil
  • 3 Tbsp oregano (I used 2 Tbsp dried + several sprigs fresh)
  • 2 Tbsp of fresh dill (you can use dry)
  • Juice and zest of 2 lemons (reserve 1 Tbsp juice for the tzatziki)
  • 1 Tbsp Worcestershire sauce
  • 1 tsp each salt & pepper

Instructions:
Bake at 425°F for 20–30 minutes or until cooked through. Let it cool before slicing for salads.


🥒 Homemade Cucumber Tzatziki

Ingredients:

  • 1 large cucumber, finely chopped
    (I scoop out the seeds with a spoon so the sauce doesn’t get watery)
  • 1 container plain Greek yogurt (I used Greek Gods)
  • ¼ cup fresh chopped dill (or a couple teaspoons dried)
  • ¼ cup finely chopped onion (red works great)
  • 1 minced garlic clove
  • 1 Tbsp lemon juice
  • 1 Tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Optional: A little fresh mint for extra brightness

Stir everything together and let it chill – it’s even better the next day.


🥗 Salad Assembly

Add as much or as little as you like of the following:

  • Lettuce
  • Spinach
  • Tomato
  • Kalamata olives
  • Pepperoncini
  • Feta cheese
  • Bell pepper
  • Pomegranate
  • Sliced chicken
  • A generous dollop of the homemade tzatziki sauce

Why This Matters for Me

I’m still busy That hasn’t changed. But carving out a little time once or twice a week to meal prep has brought so much more peace into my days. I feel better. I eat better. And I no longer have that internal battle at 6AM about what on earth I’m going to eat.

It’s a small habit, but it’s helping me show up for myself the same way I show up for everyone else.
