If you’re a fan of bruschetta but looking to skip the bread and amp up the protein, this recipe is your new weeknight hero. By layering the vibrant flavors of bruschetta over juicy chicken breasts, you get a dish that’s fresh, savory, and irresistibly cheesy. Without all the carbs. Here’s how to turn your favorite appetizer into a hearty main course.
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp lemon pepper seasoning
- 1 tsp dried oregano
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp balsamic vinegar
- 1 cup bruschetta topping (recipe to follow)
- 8 oz fresh mozzarella, sliced
BRUSCHETTA
- 1 pint of cherry/grape tomatoes quartered (any ripe tomato will do. Grape/cherry tomatoes mean less cutting if you are in a time pinch.)
- 1/2 cup of chopped Kalamata olives
- ½ cup of chopped basil (fresh works best)
- ½ cup of grated parmesan cheese
- ½ cup of mozzarella cheese (sliced or fresh mozzarella balls also work well)
- 2 Tablespoons of chopped onion
- 2 Tablespoons of minced garlic (roasted garlic works well in this recipe)
- Juice and zest from 1 lemon
- 2 Tablespoons of balsamic vinegar
- 2 Tablespoons olive oil
🔥 Directions:
- Prep the Chicken Preheat your oven to 425°F Drizzle olive oil into a baking pan and place the chicken breasts in a single layer. Season generously with lemon pepper and oregano.
- Add Aromatics Scatter the sliced onion and minced garlic over the chicken. Drizzle balsamic vinegar across the top for a tangy kick.
- Bake Round One Bake uncovered for 20 minutes. The chicken will begin to cook through and absorb all those delicious flavors.
- Bruschetta Layer Spoon the bruschetta topping evenly over each chicken breast. Return to the oven and bake for another 20 minutes. The tomatoes will soften and meld beautifully with the chicken.
- Cheesy Finish Top each breast with slices of fresh mozzarella. Switch your oven to broil and cook for about 10 minutes, or until the cheese is bubbling and golden brown.
🌿 Serving Suggestions:
Pair this dish with a simple arugula salad or roasted vegetables for a balanced meal. We enjoyed fettuccine Alfredo with ours last night. It’s also fantastic over a bed of zucchini noodles or cauliflower rice if you’re keeping things low-carb.
This bruschetta chicken bake is proof that comfort food can be both wholesome and gourmet. It’s easy enough for a weeknight, yet elegant enough to serve guests.
