  1. Amy, I just made my second batch of jarred salads. I ate the last of my first batch at lunch today…TEN DAYS old and as fresh as the day I made it. Unbelievable! What a major boon for keeping veggies fresh and having such variety in my salads. The first batch was your riff on the Waldorf Salad. Today’s batch was “Paradise” with the Blueberry-Lemon Dressing. Can’t wait to “try them all”!!! 🙂
